Peach Cake

8 Servings, about 2- by 2- inch piece each

Canned peaches, light-syrup pack, drained and chopped 2 1/4 cups (29-ounce can)
Sugar 1/2 cup
Flour 1 cup
Egg 1
Baking soda 1 teaspoon
Vegetable oil 2 tablespoons
Vanilla 1 teaspoon
Brown sugar, firmly packed 2 tablespoons
Whole milk 2 teaspoons


PREPARATION TIME: 20 MINUTES
COOKING TIME: 30 TO 35 MINUTES

1. Preheat oven to 350° F. Lightly grease 8-by-8-inch pan.

2. Spread peaches in baking pan. Mix remaining ingredients, except brown sugar and milk, together in mixing bowl; spread over top of peaches.

3. Bake until toothpick inserted into cake comes out clean, about 30 to 35 minutes.

4. For topping, combine brown sugar and milk in small bowl. Drizzle mixture on top of cake; return cake to oven, and bake 2 to 3 minutes.

5. Cut into 8 pieces

Strawberry Shortcake

Ingredients:
2 1/3 cups Bisquick baking mix
3 Tbsp butter, melted
1/2 cup milk
3 Tbsp sugar for the biscuits, 1/2 cup of sugar for the strawberries
3 baskets of fresh strawberries
whipping cream
vanilla

Remove the stems from the strawberries. Slice into thin (1/8") slices. Put into a large bowl. Add 1 Tablespoon of sugar, mix into the strawberries. Set aside at room temperature to macerate (which means that the sugar will soften the straweberries and help release their juices).

The strawberry shortcake biscuit recipe used to be on the side of the Bisquick box. For some unfathomable reason, the company has started to print the recipe on the inside of the box. Talk about not understanding your customers! If you can't find the recipe, here it is:

Heat oven to 425°F. Stir baking mix, melted butter, milk, and 3 Tbsp of sugar in a mixing bowl until soft dough forms. Drop by 6 spoonfuls on to a greased cookie sheet. Bake 10-12 minutes or until golden brown.

After the strawberries have been sitting for 20 minutes or so, take a potato masher and mash them a little. Not too much, just enough to get more juice out of them.

Taco Pizza

1 lb. hamburger
Taco seasoning
1 pizza crust (Robin Hood or Martha White)
1 sm. can tomato or pizza sauce
Cheddar cheese
Lettuce
Tomatoes

Fry hamburger and add taco seasoning. Make crust per directions on package. Bake crust for 10 minutes, add tomato or pizza sauce. Spread hamburger mixture over the sauce. Add grated cheddar cheese on top of the hamburger mixture and put in oven for 10 minutes or so until cheese melts. Cut up tomatoes and lettuce. Serve in squares, individuals can add tomatoes or lettuce.

Impossible French Apple Pie

Ingredients:
6 c. sliced apples (peeled)
1 1/4 teaspoons cinnamon
1/4 teaspoon nutmeg
1c. sugar
3/4 c. milk
1/2 c. Bisquick
2 Eggs
2 tablespoons Margarine or butter (softened)

Streusel: Mix 1 c., 1/3 c. packed brown sugar, and 3 tablespoons firm butter or margarine until crumbly.

Directions: Heat oven to 325 degrees. Grease pie plate. Mix together apples and spices and sugar; then put into pie plate. Beat the remaining ingredients until smooth; 15 seconds in a blender on high, or 1 minute with beater. Pour onto apple mixture. Sprinkle with streusel topping. Bake 60 minutes or until knife comes out clean of center.

Italian Style Meatloaf

1 1/2 pounds ground beef
2 eggs, beaten
3/4 cup dry bread crumbs
1/4 cup ketchup
1 teaspoon Italian-style seasoning
1 teaspoon dried ogregano
1 teaspoon dried basil
1 teaspoon garlic salt
1 (14.5 ounce) can diced tomatoes, drained
1 1/2 cups shredded mozzarella cheese


Preheat over to 350 degrees F (175 degrees C). In a large bolw, mix together ground beef, eggs, bread crumbs and ketchup. Season with Italian-style seasoning, oregano, basil, garlic salt, diced tomatoes and cheese. Press into a 9x5 inch loaf pan, and cover loosely with foil. Bake in the preheated oven approximately 1 hour, or until internal temperature reaches 160 degrees F (70 degrees C).

Mexican Lasagna


1 pound lean ground beef

1 (1 ounce) package taco seasoning mix

1 (14 ounce) can peeled and diced tomatoes with juice

10 (6 inch) corn tortillas

1 cup prepared salsa

1/2 cup shredded Colby cheese

Preheat oven to 350 degrees F (175 degrees C). In a large skillet over medium-high head, brown the ground beef, and stir in the taco seasoning and tomatoes. Line a 9x13-inch baking dish with half the tortillas. Spoon the beef mixture into the dish, then top with the remaining tortillas. Spread salsa over the tortillas and sprinkle with the cheese. Bake at 350 degrees F (175 dgrees C) for 20 to 30 minutes, or until cheese is melted and bubbly.

Black Bottom Ice Cream Pie

BLACK BOTTOM ICE CREAM PIE




18 chocolate wafers (Oreos), crushed
1/3 c. butter, melted
6 oz. semi-sweet chocolate chips
1/2 c. cream
1/2 tsp. vanilla
1/2 pt. chocolate ice cream, slightly softened
1 - 1 1/2 qts. vanilla ice cream
Combine crumbs and butter; pat into buttered 9" pie pan. Freeze while preparing filling. Melt chocolate chips in cream over low heat; stir occasionally. When melted and thoroughly blended, remove from heat. Add vanilla and chill until thickened. Spoon chocolate ice cream into pie crust and smooth with back of spoon. Refreeze 30 to 40 minutes. Spread 3/4 of sauce over ice cream. Freeze until quite firm. Place large scoops of vanilla ice cream over sauce. Drizzle remaining sauce over top of pie. Freeze.

Remove from freezer 15 minutes before serving.
